A spicy fresh cilantro salsa that pairs great with earthy and rustic flavored dishes!

Ingredients

  • 1 bunch of cilantro finely chopped, stems included

  • 5 roma tomatoes

  • 4 jalanpenos

  • 2 cloves garlic

  • 1/2 red onion, chopped

  • juice of a half lemon

  • salt and pepper to taste

Directions

  • Roast the tomatoes, onions, garlic and jalapenos until they begin to char. About 10 minutes under the broiler, flipping each ingredient after 5 minutes.
  • Blend the roasted items and half of the chopped cilantro into a puree, or to a desired consistency.
  • Mix in the remaining cilantro and the lemon juice.
  • Add salt and pepper to taste.

This salsa is great compliment to spicy and earthy dishes, adding fresh and crisp notes to your meal or snack. It tastes great with any kind of food, from meats and seafoods, to chips and empanadas. You can adjust the heat index by adding or subtracting the number of jalapenos, cleaning out their seeds and veins, or gently simmering or microwaving the peppers in milk before roasting them. You can also add some avocado oil during the blending process, to obtain a more creamy emulsified texture to the salsa.
